This cuvee is the result of an exercise in patience. First, they wait for the biodynamically farmed grapes, grown on the flint and limestone rich soils of the southern hillside of Epernay and Chavot, to ripen. Then slow alcoholic fermentation in barrels, and aging for 18 months on fine lees in barrels before bottling. All in order to reveal the richness and complexity of Pinot Noir... with finesse and purity! 2 g/L dosage.
