The wines of the Nicolas Rossignol estate are produced using carefully sorted grapes from vineyards grown using traditional winemaking techniques inspired by biodynamics.

The vineyard is managed using reasoned viticulture methods, taking account of the lunar influence, both during cultivation and the production &elevage of the wine. No chemical herbicides are used: soil maintenance is ensured through light ploughing.

Pommard wines are like an iron fist in a velvet glove. The appellation contains 28 premier cru sites. It's aromas are redolent of blackberry, bilberry, or gooseberry, cherry pit and ripe plum. At full maturity, it tends towards leather, chocolate and pepper. The firm tannic structure makes the wines of Pommard a suitable partner to beef steak, lamb and poultry alike. Pommard needs time to realize its fullest potential.
