As one of Rossignols more delicate features, The Volnay 'Cailleret' is dubbed the "lace of Volnay". Grown below Taillepieds, which gets its name from the rocks that the vines grow on, the clay soils sit on a layer of hard chalky soil from the Jurassic era. The vines thrive on steep slopes and South-East sun exposure, giving this wine a soft elegance. Beautiful aromas envelop the nose which are supported by floral notes, minerality and silky tannin structure.

The wines of the Nicolas Rossignol estate are produced using carefully sorted grapes from vineyards grown using traditional winemaking techniques inspired by biodynamics.

The vineyard is managed using reasoned viticulture methods, taking account of the lunar influence, both during cultivation and the production &elevage of the wine. No chemical herbicides are used: soil maintenance is ensured through light ploughing.

The Volnay appellation produces only red wine (Pinot Noir) under it's name. Located high up in the Cote de Beaune on the hill of Chaignot. The wines of Volnay are admired for their delicacy and their intense aromatics. Drinking this wine, one seems to bite into a fresh fruit and breath in its heady aroma. bouquet.
