Coming from 35 year old vines located on the the middle of the very steep, south facing hillside (about 300m), with shallow soil, of a calcareous nature, that is not very fertile and therefore produces very low quantities of very high quality fruit. This vineyard in a great lookout spot! The wine sees 12 months in barrel, 25% of which is new.

The 2021 Savigny-l??s-Beaune Aux Gravins 1er Cru has a lively, slightly candied bouquet with vibrant red fruit, kirsch and desiccated orange peel. The palate has a strict and quite graphite driven bouquet, linear, a no-messin' Savigny that takes this vintage seriously. The sapid finish means it should reward cellaring. Excellent. - Vinous

The Pavelots have been making wine in Burgundy's Cote de Beaune for a couple hundred years, however it wasn't until the 1980's when Jean-Marc and his son, Hugues, put the winery on the map. Today, the property covers 13 hectares, mainly in the municipality of Savigny-les-Beaune but also in Beaune and Aloxe-Corton. The wines of Domaine Pavelot have elegant fruit tones but are highly structured.

The main growing region of Burgundy spans from Dijon in the north through the Cote de Nuits, Cote de Beaune, Challonaise all the way through to Macconais. Chablis and Beaujolais too.
The primary varieties here are Chardonnay for white and Pinot Noir for red, you can also find Aligote and Gamay for a little variety.
