WE LOVE IT BECAUSE:

The Rosier family moved from Champagne to Limoux in the South of France in 1982. Since then they have increased their production and continue to operate their family run winery, which is now in its second generation. This sparkling wine has aromas of crisp green apple, bright citrus and a light honey quality. On the palate this wine is bursting with acidity and pairs excellently with shellfish, poultry or on its own!

In 1982, the Rosier family made the move from their hometown of Champagne to Limoux, where they purchased a vineyard property in Villelongue d'Aude. With a fresh start, they immediately began restructuring the vineyard and replaced the existing red Aramon vines with Chardonnay, Chenin, Mauzac, and Pinot Noir. This led to the creation of their first 'cuvee' in 1983, producing only 600 bottles.

The first records of sparkling wine trace back to the region of Limoux. Written records, dating back to the 1500's reveal the Monks of St Hilaire making sparkling wine. The famous Blanquette de Limoux is made in the same method as Champagne and must contain a minimum of 90% Mauzac, with the rest Chardonnay or Chenin Blanc
