WE LOVE IT BECAUSE:

‘Lalume’ from Dominio do Bibei is a captivating white from Galicia. The majority of this wine is made from Treixadura (tray-sha-doo-rah), the region’s most prized white grape. Expect aromas of ripe tropical fruit, honeysuckle and spice with a distinct minerality that can be attributed to the granite soils of the surrounding valleys. With a portion of the wine aged in oak barrels, and some aging on the lees, Lalume has a texture and opulence reminiscent of white burgundy. We recommend decanting or a good swirl in your glass to allow this wine to show everything it has to offer. Try pairing with stuffed peppers or seafood Paella.

Established in 2001 by Javier Dominguez as part of an endeavor to reconnect with familial roots in Ribeira Sacra. The winery is located in and named for the breathtaking Bibei Valley. The vineyards are scattered throughout the steep hills at elevations anywhere from 350 to 950m above sea level. Reverence for the land is centric to Dominio do Bibei. The vineyards are cultivated using biodynamic methods and the winery itself has been built below ground so as to not interfere with the natural scenery of the region.

The sweeping valleys of Ribeira Sacra, which translates to “Sacred Riverbank” sit in the heart of Galicia. The continental-mediterranean climate and mountainous terrain composed of granite, schist and slate make for optimal wine growing conditions. Because of the dramatic nature of the landscape, with some vineyards planted on nearly vertical slopes, mechanical harvesting is nearly impossible. Exciting and high quality wines have been produced in Ribeira Sacra since Roman times.
