WE LOVE IT BECAUSE:

Cuvée XXIV is a rare one-off from Sabre, born out of the catastrophe of the 2024 vintage. With yields drastically reduced, she blended almost all of her parcels together under the Bourgogne Rouge label, including fruit from Volnay, Pommard and Beaune Clos de Renards. Just 900 bottles were produced, compared to the 9,000+ bottles she would normally make. The result is what we can best describe as a Super Bourgogne Rouge, overdelivering on what you’d expect from the appellation. Fresh cherry, peony and a touch of pepper lead into a silky, precise palate with juicy fruit, bright acidity and a lively sense of tension.

When Fanny Sabre took over her family estate in 2005, she was just 25 years old and among the very slim ranks of female winemakers in Burgundy. From the outset, she embraced an organic approach to farming, which was certified in 2018. She trained with natural wine pioneer Philippe Pacalet and employs low-intervention winemaking with minimal added sulfur. Her 8 hectares are spread across five appellations in the Côte de Beaune, with her winery in Pommard.



She is quirky, energetic, creative and adaptive, traits necessary in Burgundy these days. Fanny moves to the beat of her own drum, embracing innovation with some American oak and even planting a little Pinot Blanc (shhhh, don’t tell the Burgundians). When speaking to us about the losses in the 2024 vintage, in which she lost 90% of her fruit, she simply said, “That’s life.” Winemakers don’t get a choice but to keep moving forward. We are thrilled to add Sabre’s wines to our repertoire.
