WE LOVE IT BECAUSE:

Though there was little wine made in 2024, the whites have plenty of nerve and vivacity. This Bourgogne Blanc is a blend of two clay and limestone parcels, one in Meursault just below the Château de Meursault and the other in Pommard, next to Sabre’s Aligoté. Made with natural winemaking methods, indigenous yeasts and gentle pressing, it is aged in old oak barrels, allowing the fruit and terroir to take centre stage. Bright citrus, white peach and crisp pear meet a distinct chalky minerality and refreshing acidity, making for a lively, pure expression of Chardonnay.

When Fanny Sabre took over her family estate in 2005, she was just 25 years old and among the very slim ranks of female winemakers in Burgundy. From the outset, she embraced an organic approach to farming, which was certified in 2018. She trained with natural wine pioneer Philippe Pacalet and employs low-intervention winemaking with minimal added sulfur. Her 8 hectares are spread across five appellations in the Côte de Beaune, with her winery in Pommard.



She is quirky, energetic, creative and adaptive, traits necessary in Burgundy these days. Fanny moves to the beat of her own drum, embracing innovation with some American oak and even planting a little Pinot Blanc (shhhh, don’t tell the Burgundians). When speaking to us about the losses in the 2024 vintage, in which she lost 90% of her fruit, she simply said, “That’s life.” Winemakers don’t get a choice but to keep moving forward. We are thrilled to add Sabre’s wines to our repertoire.
