On the slope above Chapitre lies the Cloux area, with its clay-limestone soils becoming increasingly evident. The wine is aged in oak barrels for 18 months, then bottled. This fine, fruity wine boasts mineral notes and a solid structure, perfect for enjoying at 12° with Comté or goat cheese.

 

Domaine Bernard Defaix is a fourth generation family of vine-growers. Bernard Defaix started with 2 ha in 1959 and shortly after began selling their wines outside of the region. The two sons of Bernard have been managing the domain for the past twenty years. Sylvain is in charge of the vinification, the aging, the bottling, and the preparation of orders while Didier takes care of the vineyard and the general management of the domain. Helene, Didier's wife, looks after the administrative and the commercial part of the business. and operates under her own label Jaeger Defaix.

The main growing region of Burgundy spans from Dijon in the north through the Cote de Nuits, Cote de Beaune, Challonaise all the way through to Macconais. Chablis and Beaujolais too.
The primary varieties here are Chardonnay for white and Pinot Noir for red, you can also find Aligote and Gamay for a little variety.
