Made from vines that are 80 years old (45%), 40 years old (32%), & 10 years (23%), La Dominode comes from a moderate slope with clay soils containing a significant amount of sand. Exposed to the east, this terroir takes its name from the Latin 'Dominus'; it was originally the property of the "Lord" of Savigny. The wine sees 12 months in barrel, 30% of which is new.

Deep garnet in colour, La Dominode offers an incredibly complex bouquet where fruit, spices and earth are balanced beautifully. Bold, concentrated flavors of black plum and cassis, accented with spicy notes of anise, clove, and char. A seductive hint of truffle and earth adds a unique depth to this playful and provocative Pinot Noir.

The Pavelots have been making wine in Burgundy's Cote de Beaune for a couple hundred years, however it wasn't until the 1980's when Jean-Marc and his son, Hugues, put the winery on the map. Today, the property covers 13 hectares, mainly in the municipality of Savigny-les-Beaune but also in Beaune and Aloxe-Corton. The wines of Domaine Pavelot have elegant fruit tones but are highly structured.

The main growing region of Burgundy spans from Dijon in the north through the Cote de Nuits, Cote de Beaune, Challonaise all the way through to Macconais. Chablis and Beaujolais too.
The primary varieties here are Chardonnay for white and Pinot Noir for red, you can also find Aligote and Gamay for a little variety.
