WE LOVE IT BECAUSE:

From a secluded, walled 2.2-hectare plot high on the slope in Beaune, at 300 metres above sea level, this is an energetic, naturally made Pinot Noir. The 40–50-year-old vines grow on clay and limestone, producing wild strawberry, crushed cherry and dried rose petal aromas. Bright acidity and fine, savoury tannins give way to purple fruit, spice and subtle forest-floor notes, with a light, fluid texture that makes it especially well suited to the table. It will continue to develop its elegance over the next 2–5 years.

When Fanny Sabre took over her family estate in 2005, she was just 25 years old and among the very slim ranks of female winemakers in Burgundy. From the outset, she embraced an organic approach to farming, which was certified in 2018. She trained with natural wine pioneer Philippe Pacalet and employs low-intervention winemaking with minimal added sulfur. Her 8 hectares are spread across five appellations in the Côte de Beaune, with her winery in Pommard.



She is quirky, energetic, creative and adaptive, traits necessary in Burgundy these days. Fanny moves to the beat of her own drum, embracing innovation with some American oak and even planting a little Pinot Blanc (shhhh, don’t tell the Burgundians). When speaking to us about the losses in the 2024 vintage, in which she lost 90% of her fruit, she simply said, “That’s life.” Winemakers don’t get a choice but to keep moving forward. We are thrilled to add Sabre’s wines to our repertoire.
