La Pépie is a red “Vin de Pays” produced on the hillsides of La Pépière village. These south west oriented hillsides are located on granitic slopes where the rock outcrops in many places.
Organic Cabernet France (70%) and Merlot (30%) are harvested by hand, destemmed and put in tanks for a week. The fermentation is preceded by a 4-day clod maceration. Only the free-run juices are kept for this cuvée, which is aged for 5 months in stainless steel. The resulting wine is bursting with ripe raspberry on the nose and the palate, which is balanced with tart red cherry, freshly cracked black pepper, a dusting of fresh herbs and a wisp of smoke. This fresh red is a great pairing for roasted chicken (don’t tell Pépié).
