This Chablis Bienomée is produced from a single parcel, “Vaudat,” in the village of Villy, where east-facing vines grow in clear soils covered with gravel and small rocks. The result is a rocky, mineral-driven Chablis, with aromas of candied fruit and poached pear. The palate is generous and smooth, with a rich, mouth-coating texture balanced by signature freshness and a clean, lingering mineral finish.

Childhood friends turned life partners, Catherine and Louis Poitout found their way back to each other, and eventually to their true calling in Chablis. Since reuniting in 1994, the couple has built Domaine L&C Poitout into a 26-hectare estate dedicated to expressing the character of Chablis through thoughtful, sustainable viticulture. They farm with deep respect for the local flora and fauna, treating each vineyard as a living ecosystem. The result is a distinctive range of Chablis shaped by two people, one shared passion and an unwavering love for the terroir they call home.

Located in the far northwest corner of Burgundy, and closer to Champagne than the Côte d’Or, Chablis offers a distinctly different expression of Chardonnay. Its cool climate and ancient Kimmeridgian limestone soils, rich in fossilized oyster shells, give the wines their signature electric acidity, stony minerality and crystalline purity. Typically made with little to no new oak, Chablis is Chardonnay in its most fresh, dry and terroir-driven form.
