Domaine Bernard Defaix is a fourth generation family of vine-growers. Bernard Defaix started with 2 ha in 1959 and shortly after began selling their wines outside of the region. The two sons of Bernard have been managing the domain for the past twenty years. Sylvain is in charge of the vinification, the aging, the bottling, and the preparation of orders while Didier takes care of the vineyard and the general management of the domain. Helene, Didier's wife, looks after the administrative and the commercial part of the business. and operates under her own label Jaeger Defaix.

Located in the Northwest corner of Burgundy. The Chardonnay's of Chablis have naturally high acidity and minerality. Chablis rarely uses oak in some cases neutral oak might be used during fermentation.
